a summer supper {AL}


last week, a couple of friends came over for a little mid-week fiesta.  i wanted to make a simple summer supper that was healthy & tasty.  being that mexican is one of our favorites, i decided on black bean tacos & watermelon margaritas.  i personally think less is more with tacos, so kept it simple with sauteed black beans & avocado yogurt dressing, topped with fresh cilantro and squeezed lime in a corn tortilla.  

i also wanted to keep the margaritas somewhat healthy so i used fresh watermelon, blue agave nectar, lime juice, & tequila. they tasted like fresh spiked smoothies & were very refreshing in the heat of the summer.                                                                                             

black bean tacos:                                     

  • (1) 16 oz can of no sodium black beans, drain & rinse or (1) cup of dried black beans, cooked & rinsed 
  • (1) whole shallot, finely chopped
  • (2) garlic cloves, minced
  • (1) seeded jalapeno, finely chopped
  • (2) tsp olive oil
  • (1) avocado
  • (1/2) cup of plain yogurt
  • (1) lime
  • (3/4) cup cilantro, finely chopped
  • salt & pepper
  • corn tortillas

for beans: in a large skillet saute shallot, garlic, jalapeno, salt & pepper in olive oil until tender, add beans and cook for another 10 minutes on medium heat, stirring continuously. 

avocado yogurt dressing: in a mixing bowl, mash avocado. add yogurt, lime, salt & pepper. mix ingredients until well blended.  the avocados are good to leave a little chunky or if you prefer a smooth dressing, blend well with an electric mixer.

wrap 6-8 corn tortillas in a wet paper towel and microwave 20 seconds, fill shell with beans, drizzle with dressing, and top with fresh cilantro & lime.

{watermelon margaritas} fill blender just below top with watermelon pieces. add (4) tbsp of blue agave nectar, juice from (3) fresh limes, 3/4 cup of tequila, and 1/4 cup of crushed ice. blend & pour over ice with a salted rim if desired. makes (5) drinks. enjoy!
